I respect your right to choose, as I expect you to respect mine and others' rights to choose to limit your access to their spaces on their own terms, if you don't agree to those terms. You want in the house, you follow the house rules. That is what respecting free choice costs.

That's why vaccination is required to participate in the high exposure environment of schools. We don't have adult mumps numbers, but in children it's between 80 and 93%. This doesn't result in outbreaks (yet) because we don't have significant mumps reservoirs in US atm.
It is absolutely your choice to be vaccinated or not.  It's also reasonable for certain aspects of society to require you to be vaccinated to participate.  
Population immunity % varies by pathogen, but it's much more than 60%.  Closer to 95%, dependent on a lot of other environmental factors.
We do cope, with modern medicine, preventive immunization, and disease management. These are well-documented best practices for Public Health.
