A cluster of green butterbean pods that are kind of lumpy with beans. There is a messy fall garden with dried leaves and tomato cages in the background.
A black tray filled with cream and brown/purple speckled Lima beans. Most are light with dark speckles but some are dark with light speckles.
Iβm going to be so sad to pull my butterbeans on Monday. A 6-foot row yielded about a pound of dried beans over the season, and they are still flowering like gangbusters. I just donβt think I can keep them going through a multi-night freeze. π±

In retrospect, I probably shouldnβt have lost my temper and ripped out all the carrots in one of the garden beds, but I was working by flashlight ahead of a freeze and had run out of tarps.

It seems to work fine, except the oven ones take longer than the directions say.

My 2 big squash only got that way by stealth. They were hiding in a rhododendron bush on the other side of the fence from my vegetable garden!
03.11.2025 19:48 β π 1 π 0 π¬ 0 π 0If itβs more zucchini-like, I am a huge fan of the Smitten Kitchen recipes for zucchini butter spaghetti and zucchini quesadillas, and I have successfully frozen both at the cooked-down-but-pre-pasta-or-cheese stage. Itβs more flavorful and less watery than regular zucchini.

Thatβs impressive! My biggest were only 3 feet long. By the time of year, I am guessing that is a fully mature squash rather than a younger one that is more like a zucchini?
