We ended up getting rid of our crock pots/slow cookers because instant pot could do all the same stuff but so much faster and we don’t have space for a lot of small appliances.

They probably just needed longer in the pot. I don’t eat meat anymore, but back in the day we did instant pot ribs many times and they came out very tender. I don’t recall the cook time, though. I know you probably won’t want to try again after this.
