Double boiler. Whisk the hot pancetta/bacon fat into the eggs & herbs, finish with lemon juice (since the classic has always been imbalanced imo - fat on fat & salt but no acid??)

A bacon hollandaise in a bowl

The thing is, the Italians don’t want you to know that carbonara sauce is essentially a hollandaise, & can therefore be improved by French methods

Did I get a flat on the way home? Yes. Is that a typical Spring occurrence when street detritus is freed from the ice and snow? Also yes

Three NE Mpls turkeys in a front yard

Three NE Mpls turkeys in a front yard

Look, I love the NE Turkeys, but they have been menacing my household by coming up to the top of my front stairs and shitting all over the place. And not just dry, white turds. Most recently sloppy wet mess. And what, am I supposed to get my hose out to clean that up?? Too soon!

Concerning Fenders: Transportation Cycling iii (Header image from the 1960 Rene Herse catalogue, scanned by Heiko) Imagine with me, if you will, an ardent defender of unracing. This person frequently casts shade on β€œroadies” and the…

The roads are gonna be soaked for months before we even see rain. Once again encouraging people to install full coverage fenders if you want to ride!

I’ll be out in a few hours enjoying the sun, and be dry and clean when I get home

Seminary is just not the place for serious scholarship in my experience. It’s undergrad level work for people who are gonna be ordained but who haven’t yet read a canonical Gospel all the way through

Here’s the thing: I took a class on Jeremiah in seminary, not knowing it was going to be framed around β€œtrauma”

Now, I like that prof - to be clear - but I HATED the class. We didn’t even read the whole book, I learned nothing on the history of scholarship, nor the complex text…

Hhmm, at least in my experience ppl that squeaked through seminary, know vaguely about the Synoptic problem & JEPD, took a Trauma in Jeremiah elective now think they are in the know. I wouldn’t call such over educated

πŸ’― Among other things I’ve found a rather crude β€œend of history” attitude amongst prog xians - even academics! β€œWe’ve looked into the essence of religion, we understand what’s going on, and we’ve won. It’s all vibes anyway”

Anyone know a good nature documentary that is heavier on the science, like the ones I used to watch at school? I find most these days try to make them personal stories: "Here's Betty. She's a tarantula. And she's got to make a nest. But look out for Pete the snake! There's gonna be a fight!"

I've also found J Crew shoes to be consistently great for whatever reason. In contrast to Polo Ralph Lauren, whose clothes are obvs fabulous, but whose shoes have been quite hit and miss for me!

Fwiw my dedication to Wittgenstein is solely due to the fact that his work continuously helps me understand so many different facets of reality. It continues to give. It has nothing to do, for me, with his personality. By all accounts he was an ass
