I love this. Of course, I'm not in total agreement.... but spooky close. I've never been to the Woodlawn Theatre or Carver. I know, I know... that has to change. Stephens Center and Lyric are both just amazing. (Lyric is #2 behind Saturn for me).

Using smoked neck bones from Piggly Wiggly and a splash of concentrated Zataran's crab and shrimp boil seasoning along with good andouille is pretty tasty if prepared this way. Although, maybe andouille for Cochon deserves even better than this.
