Guests were more subordinate and it was an insult to offer to contribute. Often the guests were poor villagers that didn't have the ability to contribute.

In the south of Europe food was plentiful so meals were more frequent, less formal, and the guests had obligations to contribute.
This is also WAY easier than trying to coordinate a potluck. Results in a much more coordinated menu with less effort. If someone wants a specific dish the ingredients are added to the list and they just volunteered to cook it. π

Its great for Friday night suppers where we meet at the grocery store to decide what we want, or for big elaborate meals.
Everyone comes over early to cook, enjoy time together, walk the dogs, etc. We cook together and relax. And then eat.
Anyone that didn't cook cleans up.
The food host then divides the bill, so everyone owes $12, or $20, or $50. Whatever (will come back to this)
6) is one I love. We have a group that does this from small meals to big meals. For big meals one person is the "house" host and another is the "food" host.
The house host cleans and gets ready, starts the turkey.
The food host does the menu and shopping.
1,3,3 be specific - a lovely red would go well with this. I was thinking *desert* from *place* would be a great finish, etc.
5 may be the hardest, especially if there are frequently new people.
Well, it is impacting you so it is your problem not just theirs (my semantics may be off, take my meaning here).
There are easy options to give them
1) wine
2)desert
3) donation to a charity
4) its their turn next
5) try to make them believe you that you dont want anything
6) friendsgiving
Let me take a step back. Are you asking for advice or just a saf space to vent?
