My aunt Sally was by far the worst when it comes to culinary crimes.

Her mashed potatoes were boiled potatoes, mashed. No fat, no dairy, no salt, no pepper, just dry-ass potatoes.

My only secret for turkey gravy: when you make your stock (neck, wings, giblets EXCEPT for the liver, plus aromatics, bay, and whole black peppercorns)...

... add about 2 Tbs of apple cider vinegar to the pot.

(this is also a good place for broccoli stems or kohlrabi)

We don't do it for Thanksgiving, but I enjoy a good vinegary (no mayo) slaw with red cabbage, julienned granny smith apple, just a bit of grated onion, and a healthy amount of whole grain mustard

I make a compound butter with salt, black pepper, Bell's seasoning, and smoked paprika that goes under the skin.

Then I take some roughly chopped celery, carrot, onion, and a lemon - toss that with a little more salt and poultry seasoning, and lightly fill the cavity.

Never had a complaint!

Too many people just take the turkey out of the bag and put it in the oven.

If you don't treat your turkey with respect, you're going to get a dry, tasteless turkey, and you'll deserve it.

Gravy is absolutely the key. Mom and I have been cooking the holiday meals together for a loooong time now, and I'm always responsible for the turkey, gravy, and stuffing. Mom usually does the pies and potatoes, and we decide on other sides a few days beforehand.
