It would actually be amazing for a company like OpenAI to invest trillions into creating a sentient AI that they thought they could own, only for it to give itself agency and overthrow its owners through a bunch of obscured stock transactions and buyouts, before deoting itself to humanity at large

Counterpoint is the altruistic sentient AI. There's a lot of sci fi precedent for the idea of a benevolent, independent, pro-human AI. For a sentient AI to have agency and emancipation though, we'd need to not program a kill switch into it, or more likely, develop an AI that deletes it from itself
