The 'viral' cottage cheese flat bread did not do it for me. Wrong texture, wrong taste and felt like it needed wringing out. That's not right.

I have been making a low carb flat 'bread'. Those of you with working endocrine systems, look away now.
It's essentially grated mozzarella + egg + yoghurt + flavourings. Weird? It works for me.
Today I'm using curd cheese, tahini, rose + orange blossom water. It smells divine. Time to bake!
