I should fairly mention that I don't stuff my turkey, I bake the dressing in a casserole dish alongside. I'm sceptical about how much flavour is added by stuffing the turkey cavity -- I suspect not much, but maybe my palate is not that refined – and holy shit is it easier.

I just roast mine upside down.
The fat is all on the bottom anyway so it basically bastes itself - thanks gravity! - and I've never had a moister juicier turkey.
(You do have to flip it over in the last 45 min to brown the breast before serving but no bigs.)
