I do dock points off of Silksong for the Trobbio boss fight.

It's both visually really cool and makes me want to vomit with all the bright flashing reds.

It's nice if a game has those easier / more accessible options, but I'm generally not going to dock points off a game for not including them.

Unless its button remapping, all games should let you rebind buttons freely.

If it's someone who's bad at video games, they're more likely to just ask for X boss to be nerfed or have infinite stats cheats as an option in the menu.

I feel like the biggest tell is what they want changed and why.

Like the skulls (keys) in Ultrakill now have symbols on them so colorblind players can tell them apart without the color.

Wanting to have more freedom to re-bind keys or having actions that use multiple buttons using one button too.

I've seen other people compare Yume Nikki and OMORI a lot. While OMORI is a pretty heavy game, I really liked it and it had a lot of surreal elements to it.

With the theme of "reinterpretation", I'd point to something specific in Chapters 3 and 4 of Deltarune, mostly chapter 4 though.

TUNIC may give you some ideas. While there is an in-universe language that can be translated and a few English words, it relies mostly on images to show you how to progress.
