2Kg rack of beef back ribs from Costco, for reference.

Basic spice rub; S+P, paprika, garlic, onion, mtl steak. Wrap tightly in foil. 275 oven, bones up, 4hrs. Unwrap. Meat up. Sauce. Broil. Enjoy!!
