We were fortunate we didn't have to do the bus until middle school, and there, it was only in the afternoons since drop-off coincided nicely with my wife's work schedule.

Yeah, my oldest is 26. Her elementary school days were similar. It was easily 30 minutes to get her dropped off in the morning due to traffic and the two lane road that fed her schools. Our youngest turns 18 in May. Her situation was less problematic out in Morrisville.

My wife's premium, as a state employee covering only herself, increased $110/month. That's about a 200% increase...again, as a state employee. The coverage is just meh. Not terrible, but not great. If she, as a state employee, saw a 200% increase, I can only imagine how bad it'll be on the exchanges

IKGAF Chicken & Rice
(For those times when you kinda give a fuck and have a little more time)

Ingredients

* 1 lb boneless chicken breast or thighs, flattened
* 2 cans Cream of Mushroom Soup (10.5oz each)
* 2 packages of Boursin Garlic & Herb cheese (5.2oz each)
* 1 1/2 cups uncooked brown basmati rice
* 3 to 3 1/2 cups water
* 8 oz white mushrooms
* 8 to 12 oz bag frozen peas & carrots
* 2 Tbsp butter (for rice)
* 1 Tbsp butter or olive oil (for mushrooms)
* 1 Tbsp butter or olive oil (for chicken)
* 2 tsp salt (for rice)
* 1/2 to 3/4 tsp black pepper

Directions

1. Start your rice. (I use a rice cooker)
    1. Add the 1 1/2 cups uncooked brown rice to your rice cooker
    2. Add 3 to 3.5 cups water (whatever the package recommends)
    3. Add 2 Tbsp butter and 2 tsp salt
    4. Cook rice
2. Start your base.
    1. Add 2 cans of cream of mushroom soup to 2qt sauce pan
    2. Add 1 soup can’s worth of warm water and mix.
    3. Crumble both packages of Boursin cheese into the mixture
    4. Warm over medium-ish heat.
    5. Whisk the mixture occasionally to ensure the cheese melts and is evenly distributed
3. Start your veggies
    1. Chop your mushrooms into small pieces
    2. Add 1 Tbsp butter or olive oil to a non-stick pan and cook mushrooms. Season with salt & pepper
    3. Set aside when done.
    4. Cook peas & carrots according to package directions, set aside
4. Cook the chicken
    1. Cut the chicken into 1/2” chunks, season with some salt & pepper and toss in your non-stick pan with a Tbsp or so of butter or olive oil
    2. Brown the chicken until cooked, set aside
5. Throw it all together
    1. When the rice is cooked, remove to a large mixing bowl.
    2. Add your mushrooms, peas and carrots and mix with rice
    3. Add your cream of mushroom & Boursin cheese base to the rice & veggies. Mix thoroughly
    4. Add your chicken to the bowl. Stir into rice, veggie and base mixture
    5. Add pepper to taste.
6. Serve

If it's a "IKGAF" (I kinda give a fuck) day, here's an alternate that uses raw chicken and fresh mushrooms. If you have more time, you could obviously extend that to use fresh peas and carrots. Or sub any other fresh veggies that would work well with the garlic & herb Boursin. Chef's choice.
