If you do bone-in, just ask for a 3 bone prime rib roast. It will be plenty of meat. If you don’t want to bother with the bones ask for a roughly 2.5 lb thick prime rib aka ribeye steak - it’s the same cut of meat. Most supermarkets will cut you one to your requested size.

I immediately thought of huevos rancheros. Which I love. Add some sliced avocado, fresh tortillas and spicy pico. Beans and eggs go together so well. It’s my fav breakfast next to a Full English.
