You are correct. Given an area, you will have the smallest perimeter if the rectangle is a square, but you definitely need a side to know what it is.

When I'm going to start the heel flap, I turn and do (sl1, p1) across, and then add a slipped stitch at the end to make 1/2 the stitches +1. The rows are then one of just k across, and one of (sl1, p1) ending with sl1. I prefer the symmetry.

I do almost exactly the same, except I like to use one extra stitch for the heel flap, so that both edges have the slipped stitches and are easy to pick up from.

Same! I can put a simple pattern on the leg, as long as it's something I don't have to look at much and can easily remember, but the foot is always plain, and I always go back to my favorite 6" metal size 0 dpns.
