A year is fine and about normal. Two years is a maybe. Three years is "I'll try other markets first." However, the monthly submission window is a positive. If you responded to subs in < a month, I'd be way more willing to wait on publication since the piece wouldn't spend 9 months in slush.

I could make any of these work. E might be the hardest as I’m the least familiar with it, but I’ve had amazing North African and Ethiopian food. People are dissing A, but you have French cuisine in there, plus I could probably live on Belgian beer alone.
