By profiling the lipidome up to 200 days, we show that organoids undergo dynamic lipid changes during maturation, and that ALD organoids display an early and persistent accumulation of very long-chain fatty acids. Importantly, these lipid alterations mirror those reported in ALD patient brain tissue
