“The Gathering” is a straight-up mystery that weaves in lots of backstory.

A great mostly stand-alone episode is s3e4 “Passing Through Gethsemane.”

The 2-part “War Without End” s3e16-17 has some of the most memorable scenes in the series. It might be confusing, but it might also hook you.

We are rewatching Babylon 5 now that it’s on YouTube and man, that is the platonic ideal of what a space station looks like. That’s just what they all look like in my head. The variety of interiors are perfection.
