Finished Chicken Wellington on a plate. The puff pastry is golden brown, the scoring isn't clearly visible in this lighting and view. The wrap and fold aren't as tight as you'd see with regular (not gluten free) pastry.

Ok, ok; just kidding. That's the first step in making Chicken Wellington. Final product shown here. Yes, internal temperature > 165 degrees fahrenheit.

It's not the prettiest because it's using gluten free puff pastry (I have Celiac disease). That stuff is shitty to work with; zero stretch.

2 large chicken breasts on a plate, each cut in half. The top and bottom are well browned and is seasoned with coarse salt, thyme, and parsley. The center of the chicken can clearly be seen to be mostly pink and uncooked

I don't know why everyone is all "whaaa whaaa, you've gotta cook chicken to 165 degrees whaaa whaaa whaaa"

Man, you haven't had good chicken unless it looks like this:

At a restaurant, and they seated us next to some pulleys and ropes.

Took some time to restore my grandpa's Zippo lighter. So many memories of him with it. Just the smell of the fuel burning brings back those days ❤️
