Most planeswalkers were either mono-color with a 6 card splash or locked into 2 colors. Just a handful had the ability to splash multiple colors, usually with another restriction

Surprisingly no! Nissa had the ability to play any land regardless of color and the consensus was that basic forest was still typically the best choice. No two color non-basics, but there were a few “colorless” nonbasics that could be used by any character

You also chose a land to go with your deck. Basic lands provided one mana every turn. Non-basic lands typically had an ability that after X turns, you had a % chance to get an ability instead of an extra mana. Lands were locked to a color, but mana itself wasn’t

Players choose a Planeswalker during deck construction that provided a static ability and set deck construction restriction: Jace could play any # of blue plus up to 6 cards of one other color. Ral could play any mix of U, R or colorless. Vivian could play G, <> and up to 8 creatures of any color

AEG had a few interesting experiments in this space with Mystic Vale, Custom Heroes, and Edge of Darkness. One of the biggest issues was that those games were a real pain to reset. It was also concerning to break a sleeve, although the fact that they were transparent made them much easier to replace

Magic Spellslingers still holds a special place in my heart for its blend of guaranteed mana, random mana, and faction restrictions.
