It took me nearly 120 "days" (runs) to get to the final (known) goal. Plus some paper and pencil homework. And I wrote a python script to handle something that iterated more than I wanted to do by hand...
BUT you can get to the first ending in a much shorter time and without the extra homework.

Maybe see if you can borrow or demo it because if the main play loop is something you'd find aggravating to run ~100 times no matter what kinds of interesting mysteries layer up inside it, (and there's more to nearly literally everything than you see at first) it might not be worth it for you

Then there are the Parlor and Dartboard puzzles which you run into a lot but are short and reward resources that make your run easier but that you can also get elsewhere. But they're also training for deeper puzzles.

Since you own it already, it might be worth giving a shot. It does give you plenty of space (literally lol but also narratively etc.) to practice and get better before asking you to do anything very difficult. Exploration is very open. Hard to say more without spoiling things.

Outer Wilds does rely a lot on its flight mechanics. I almost noped out because the practice RC ship and zero-g training areas were frustrating. The real thing was easier. I also found keyboard and mouse much better even though the game suggests you use a controller. Also everyone crashes. A lot lol

The puzzles in The Witness are all very abstract, I can totally see why it's not fun for everyone. Blue Prince is more slowly gathering clues, decoding cyphers, logical deduction, double meanings and lateral thinking. Just so you have a bit more to go on to decide if you want to play or not.

Subnautica is an awesome game too. One of the top ones that I say I'd love to be able to play for the first time all over again. (Outer Wilds is one of those too.) But I don't think it left me with as much to mull over afterward as the first three I listed. Different kind of experience.
