I think "u" still skews closer to male gendering especially in many dialects which would essentially rule it out

... similarly to English with the notion of pronouns, but even more so because there's more friction and distance between the symbol itself and the rest of the language. It is however the most successful attempt so far – and maybe the only possible one?

The issue, as with all things linguistics, is achieving critical mass in common use to actually make it a significant phenomenon. This specific instances has predictably become a symbol of woke and as such it is polarizing and politicized, which really complicates things obviously

There has been a certain sustained effort in recent years to push the phonetic "ə", although with the primary reason of avoiding defaulting to the male gender when talking about multiple people. It is also meant to be used for a single non-binary person as per your specific question
