The worst part is the texture, small and rough and easily caught in the throat, but blending them in a sauce neatly removes that problem

Carrot tops, olive oil, white wine vinegar, several cloves of garlic, oregano, paprika, and salt, and blend it until you get something kinda thick but pourable. Adjust ratios to taste. It paired really really nicely with the fatty salmon

I finally figured out how to make carrot tops into a delicious sauce (my attempts at carrot top pesto were very disappointing), and I am so powerful
