With this, I would proof, shape, and then freeze. Your plan should work to defrost in the fridge!
So my suggestion would be to proof and shape in a prior day and freeze before proofing in shaped form. On Friday, you can take it out and let it defrost 3-5 at room temp then it should proof to double size in like 1-2 hours after that and cook.
