AI has always been linked with US military efforts. Defense Advanced Research Projects Agency (DARPA) has their first summer research project on AI back in 1956. AI has always been extralegal by design and the classificatory thinking embedded in AI design comes directly from military roots.

So I double proof- I do a proof right after making or 1.5 hours (with a punch down half through), then shape, then another 1 hour rise before baking.

With this, I would proof, shape, and then freeze. Your plan should work to defrost in the fridge!

So my suggestion would be to proof and shape in a prior day and freeze before proofing in shaped form. On Friday, you can take it out and let it defrost 3-5 at room temp then it should proof to double size in like 1-2 hours after that and cook.
